OOPS!

On the post from a few days back I said Nathan and Melissa were going to Hawaii. I was wrong~it was Jamaica! Either one sounds OK to me!

IN THE TOP 5 OF ANY CAKE I HAVE EVER MADE!


Toasted Butter Pecan Cake
Taste of Home


SERVINGS: 12-16

CATEGORY: Dessert

METHOD: Baked

TIME: Prep: 25 min. Bake: 25 min. + cooling

Ingredients:
1 cup plus 2 tablespoons butter, softened, divided
2-2/3 cups chopped pecans
2 cups sugar
4 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
FROSTING:
2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
2/3 cup butter, softened
6-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1 to 2 tablespoons milk
Directions:
In a small heavy skillet, melt 2 tablespoons butter. Add pecans; cook over medium heat until toasted, about 4 minutes. Set aside to cool.
In a large mixing bowl, cream sugar and remaining butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Beat just until combined. Fold in 2 cups reserved pecans.
Spread evenly into three greased and waxed paper-lined 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
For frosting, in a large mixing bowl, beat the cream cheese, butter, confectioners' sugar and vanilla. Beat in enough milk to achieve spreading consistency. Spread frosting between layers and over top and sides of cake. Sprinkle with remaining pecans. Store in the refrigerator. Yield: 12-16 servings.

This cake is absolutely delicious!

I can hardly believe that our "Bible bearer" who is was Daniels nephew is having his own wedding today. Tuesday seems like a weird day to get married but I guess that is common in Chicago.

I do miss Abby!

I know there are some people that think I am crazy to let Abigail go away for weeks but if you only knew how very much she loves my mom you would understand how I CAN do it. They are getting ready for VBS's right now and Abigail is loving it. She enjoys that stuff alot. She is also looking forward to camp. She is so excited about staying in the dorm now that she is 13. GRRRR... She is also excited about playing her flute with the other young people. And of course there is another exciting thing about camp...BOYS! I heard her telling my mom that "yeh, when my mom went to that camp there were lots of cute Kennedy's." My mom must of mentioned Anna O's brothers because she said, "yeh, she mentioned those too!" I told my mom that she is not to come home with a boyfriend! Well, mom can but not Abigail. Just for the record my mom is not interested in one of those things!

I will never be a grandma!


I guess I will never be a grandma according to new studies. I was talking to my friend and she said that she had given her baby a bath the day before but thought it would not hurt to give him another one. HUH? I gave mine a bath everyday and sometimes 2 in the summer. She informed me that once or twice a week was the recommendation because they would dry out and I told her I always used lotion on them and she said a new study shows it causes sterility!? I used it on all of mine! SOB! SOB! Has anyone heard this and am I a nut for bathing my kids everyday. I am so glad I did not read baby books!

Excuse me!?

I was talking to Abigail last night and I really don't know why I do this but I always ask her what she wore to church and she told me. I told her that if I had known she was only going to wear 2-3 outfits that is all I would of sent. She in turn told me that she did not want to talk anymore and was going to hang up....which she did! I went to the room and informed HER FATHER that HIS DAUGHTER had basically hung up on me. She was nice about it but still.........! Am I the only one in the world that has a daughter with about 3 favorite outfits? I know it should not really matter what she wears but these are people that I have known but not seen in years and I do not want them to think she is not taken care of! OUCH! That sounds like more of my problem than anything else! Well, I guess when in Ohio she can do that!

The difficult Goodbye

Well, I finally took my dads ashes out to the pond and now I can move on. I had thought I would take them to the park but there are gaters in the water there and that seemed heartless. I know that what I did was maybe heartless too but it seemed less that way. I tried to stay dry-eyed but it didn't work too well. I just knew I could not keep them forever. I know I have brought this issue up with my dad several times and I want to let you people know (before you get sick of it and stop visiting) that I don't plan to bring it up again.

I dreamed I figured out how to get my blog back and sure enough when I did those things I got it back! Once I dreamed that a boyfriend was cheating on me and that was true too. No fun! The other night I dreamed that the hubby of a fellow blogger was toothless and loved it! I won't say who it was but that is not true either.

I know this is going to sound crazy but I decided to try to pick a new template and see if I could show up my Blog and it did! I know it says that I am under review but that is because it looked like spam because I had 2 under the same name! I am trying to delete the other one but treading very carefully so I do not lose this one again! Anyway, I am so happy to have this one back! I guess I will forget about having clocks and stuff for now!

HAPPY MOTHERS DAY!




Happy Mothers Day to my 2 moms! My own mom; Linda, is definitely one of a kind! She is a good singer, listener, cook (think bbq chicken). The smile she has is tops no matter what she is going through! She is also my story telling hero! I tried that a few times and could never come close! I thank God for the wonderful mother he blessed me with! My MIL Anna is pretty good as far as MLS go! She raised a wonderful son, that is for sure! She also puts up with me which is something to be commended for! HAPPY MOTHERS DAY MOMS! I LOVE YOU!

My father-in-law will celebrate his birthday tomorrow! We all love him dearly and since he came into the family when Jonathon was 5 months old he is the only papa (paternal) they have ever known. He was my bus driver so I had a hard time calling him Roy....I still usually call him papa! Anyway, we love you and hope your Birthday is wonderful!

The blues....

For some reason I have been major down lately. I can't think of any reason. I prayed about it last night and even though I would love to say I felt better and on top of the world I can't say that but I DID leave there knowing beyond a shadow of a doubt I am being held in the arms of the almighty and that no matter how frail I may feel God is there and he will be there even:
